In the fast-changing global environment of altering consumer preferences, rapid innovation in food products and modified sales and distribution format, the food ecosystem is undergoing a sea change. There is hence an increasing need to understand the emerging needs to reduce food safety risks and sustaining with the evolving climate and environmental changes, speeding up with revolutionary food technologies, emerging microbial and chemical food safety hazards in the global supply chain, and risk-based communication to ensure consumer trust.

Globally, with lean organisations, ‘Industrial Internet of Things (IIoT)’ is seen to be playing an emerging and significant role in the industry by empowering industrial engineering with sensors and to create brilliant machines. From round the clock monitoring of food production and automated sanitation resulting in increased productivity and shelf life, it contributes to a robus t food safety program. IIoT is believed to hold great potential for quality management, productivity, efficiency and sustainability in Poultry and Farming as well. Applications for tracking goods, real time information exchange about inventory among suppliers and retailers and automated delivery all contribute to supply chain efficiency. With IIoT, It is an area where sensors, lasers, xrays, spectroscopy and other monitoring tools and techniques, go beyond segregating the acceptable from the rejected to actually examining & analysing characteristics from harvest to packaging for performing decisive human functions of sorting products based on optimised resources, utilisation, precision and efficiency. Extending the concept to Agriculture, the Smart Farm Concept and Traceability System for Agricultural products using IoT enables access to environmental data of the farm and others to the customer.

Measuring and detecting food safety contaminants and hazards in food that may have a negative health impact on humans and animals is the key contributor to ensuring safe food. Some of the current and emerging concerns plaguing the Food and Beverage industry are Food Fraud and Product Integrity, Toxins and Allergens, Veterinary Drugs & Chemical Residues in primary produce, Antimicrobials and evolving Pathogens among other food borne contaminants, which require an organisation to keep abreast of the current and evolving advancements in tools, techniques, technologies and analytical trends.
This session will deliberate on thresholds for these components, new concepts and enablers for early warning and alerts in various food chains including effective analytical techniques towards food safety and food defence.
